These are my go-to pancakes, I whipped up a serving yesterday for a special Independence Day breakfast for me!
Hearty Oatmeal Pancakes
2/3 cup rolled oats
1/3 cup whole wheat flour
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 scoop vanilla protein powder
1/4 cup liquid egg whites or 1 egg white
1/2 cup milk
1/2 teaspoon vanilla
In a bowl, combine oats, flour, baking powder, cinnamon, and protein powder. Add egg whites, milk, and vanilla into dry ingredients; stir just until combined. (Batter will be lumpy.) Pour by 1/4 cupfuls onto hot greased griddle. Turn when bubbles form on top of pancakes. Serve with fresh fruit, pure maple syrup, and a drizzle of peanut butter! Makes 5 pancakes.
These are awesome pancakes! My mom made the original recipe (this is my healthified version) all the time growing up and she often mixed up huge batches of the dry ingredients and stored them in our pantry. Then when it was time to make pancakes she just measured out some mix added the wet ingredients and was ready to rock and roll!
I’ve also made the mix, tied it up in some cute bags and given it, the recipe and homemade blueberry syrup (another post, another day) out as Christmas gifts to friends. Hope you enjoy!
