Today I wanted to share my top 5 favorite vegetables with you! I’m in love with literally every kind of fruit, but veggies, I have to force myself to eat–except for these guys, these guys I love!!
TIE-5. Green beans or Potatoes
These were a childhood staple growing up and I love them still! And it was so hard to leave potatoes off this list! I mostly eat baked potatoes or homemade potato “fries”. But I love all incarnations—cheese potatoes, hash browns, mashed. And I like sweet potatoes a LOT too!
I love leaf spinach for it’s versatility: I can throw it in the blender in a smoothie or make a big fresh salad of it. I almost always go through a box a week.
I like celery a lot! It’s always been one of my favorite vegetables! I like it with hummus, peanut butter, ranch or just plain old. (Also, I EAT carrots with celery a lot, cause they’re also quick and easy, but I don’t really LIKE them that much.)
2. Green Peppers
Thank goodness for grown up taste buds and for re-trying old foods I used to hate. I NEVER ate peppers until after I got married—now I love them raw or sautéed; chopped up in stuff, you name it—I eat it!
Yeah, I know it’s not a “good” vegetable but I love it. Especially a on the cob—with salt and butter. Ah…so good. And Nate now loves it too so that’s awesome!
AND the veggie I love to hate….
My parents and I had quite the stubborn run in when I was a wee lass about broccoli. I sat at the table looking at it until bedtime. I went to bed thinking I had “won” and made my intentions about said disgusting, green vegetable known. But alas, I met the full extent of my parent’s combined evil genius: I woke excited for my breakfast of oatmeal, but instead found I would be eating reheated broccoli.
After that I always had to choke down a small helping whenever it was served. Then, a month or so after I turned 18, as we were sitting around the dinner table the bowl of broccoli came to me. I quietly passed it along, hoping no one would notice. My sweet sister felt the need to draw my parent’s attention to my oversight. Quietly I looked down at my plate and said, “I’m 18 years old, I hate broccoli, I always have and I always will. I’m never eating it again.” You could cut the silence with a knife. Then my parents shrugged, dinner continued, and I breathed a huge sigh of relief.
And no more broccoli for me!!! Yup, that was my huge 18 year old rebellion. haha!
