This easy blueberry cobbler is so mouthwatering, simple to make, and always garners rave reviews! It’s my go-to treat for busy days and it’s the perfect summer dessert the whole family will love. You can make it with fresh berries or frozen berries!

So after my grand blueberry picking adventure last week–I knew I had to make something from scratch with my fresh summer blueberries!

I have quite a few blueberry recipes I love, so it was hard to narrow it down…

Blueberry Cobbler for lazy peopleI finally decided instead of making something old to create something new… this easy blueberry cobbler recipe. It’s a riff on an old fashioned peach cobbler recipe I grew up on…and that’s how this beautiful, delicious miracle was born. 

This blueberry dessert is a thing of beauty– a golden brown crust, dotted with gorgeous blueberries!

This recipe uses many classic ingredients that are probably already in your pantry, fridge and freezer!

  • Blueberries — I love making this with fresh blueberries, but frozen work well too! 
  • Lemon juice — Just the right amount to balance out the sweetness! You can use freshly squeezed or already bottled lemon juice
  • Sugar — Granulated sugar adds the sweet flavor to the berries. 
  • Unsalted Butter — This is going to keep our cobbler from sticking, but also add amazing flavor to our blueberry dessert. 
  • Homemade Batter — Some cobbler recipes use premade mixes–but this super simple batter is made with sugar, flour, salt, milk and baking powder. It’s a mixture between a sponge cake and a butter cake. Certainly no dry cobbler here!

How to Make Blueberry Cobbler from Scratch

It’s incredibly simple to make this lazy day blueberry cobbler. 

  1. Melt butter in a small bowl in microwave. 
  2. Pour melted butter into baking dish. 
  3. Whisk dry ingredients (white sugar, all purpose flour, salt, baking powder) together in large bowl. 
  4. Add milk and stir until combined. 
  5. Drop batter into baking dish on top of butter. 
  6. Combine juicy blueberries and lemon juice and then add to the top of the butter and batter. 
  7. Bake and enjoy warm with a scoop of vanilla ice cream!

Can you use frozen blueberries in this cobbler?

Yes! You can use frozen blueberries in this easy cobbler recipe! Defrost them  overnight in the refrigerator, at room temperature or on the defrost setting of your microwave. 

Just be sure to place them in a bowl first! Otherwise you will have blueberry juice EVERYWHERE. I promise, it is not easy to clean up from your fridge or countertop!

Can I make this cobbler recipe with a different fruit?

How to Store and Reheat Cobbler

When you taste the fresh from the oven cobbler topped with vanilla ice cream, you’ll know why leftovers are a complete rarity! 

If you happen to have leftover cobbler you can store in the refrigerator for 4-5 days. 

Reheat in the microwave in 20-30 seconds increments until warmed through.

My favorite thing is to top my cobbler with a scoop of high quality vanilla ice cream!! (I have a soft spot for Hudsonville and Bluebell ice cream.)

But I also love it’s buttery sweetness paired with a strong cup of coffee–either pairing is delicious! My best advice is to slow down and savor it fully!

You can make this simple blueberry cobbler in a matter of minutes using fresh or frozen blueberries and a few pantry staples! It’s perfect to top off a summer evening with friends or a low key night hanging out with your family.

Easy Blueberry Cobbler

Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes

An incredibly easy and delicious dessert, perfect for potlucks and easy family dinners. Makes fast with fresh or frozen blueberries.

Ingredients

  • 1 cup flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2-2/3 cup milk
  • 1/2 cup butter
  • 3 cups blueberries
  • 1 Tablespoon lemon juice

Instructions

  1. Heat oven to 350. Melt butter in oven in a 2 quart, 8x11 baking dish. (Yes! Just do it!) Or melt butter over stovetop and pour into baking dish.
  2. Mix flour, 1 cup sugar, salt, and baking powder. Add milk gradually until a smooth batter forms. Spoon batter into baking dish on top of butter until the butter is covered with batter.
  3. In a separate bowl sprinkle lemon juice on blueberries. Top the batter evenly with blueberries mixture.
  4. Bake at 350 for 35-45 minutes or until cobbler is light brown across the entire dish. Serve warm with a scoop of ice cream.

      1. Oh so sorry about that! Were your blueberries fresh or frozen? If they are frozen they need to be thawed and drained. I’d even go as far as dabbing off some of the liquid with a paper towel. That excess moisture can make it mushy. You could also try giving it an extra 5 minutes in the oven–it should be a warm golden brown color, but it is not as thick as a cake–cobbler, especially when warm is a bit softer in consistency. Let me know if any of those tips help!

    1. I tweeked the recipe by adding a few ingredients like brown sugar, cinnamon and cornstarch. I decided to broil it at the end because I wanted to eat it and it wasn’t done. Well the crust crystalized and gave a great crisp crust on the edges, it was perfect and easy. I will be trying with blackberries next. I did use frozen berries without an issue I feel like it helps keep it moist as well.

    1. Nope, poor sibs did not get any! I took it to small group and there were three leftover pieces on Friday. Now there are no leftover pieces. haha!

  3. I made this tonight using whole wheat pastry flour and it was delicious! I found that only 1/3 cup of milk was needed though, as more milk made the dough too runny to pour over butter.

  4. I made this today but found it a bit bitter. Do you know why? Also 1/2 cup = 113 grams of butter seem too much
    and I threw some away. Does this affect the taste?

    1. Hi Nancy, I’m not sure why that would be, the butter seems like a lot, but it makes it absolutely delicious! If you changed up the recipe, I’m not sure what could be affecting the taste.

      1. Just another thought–check your baking powder, sometimes it goes bad and can affect the taste of recipes. 🙂

    1. IF you double the recipe it will be perfect in a 9×13 pan. If you use a smaller one it just may be puffier (for lack of a better word) and I would just watch the cooking time as well.

  5. This looks great! I’m trying it today! Question: Why does it say 1 cup of sugar “divided”? Do you add sugar to the blueberries and lemon juice?

    1. Hi Heather, originally I made it that way with an extra T of sugar BUT I tried it without and you really don’t need it so I took out the extra T of sugar but never updated the recipe with the divided part. Thanks for catching that and I hope you enjoy this cobbler!

  9. I LOVE blueberries so every time they go on sale I try to stock up a bit. However, I didn’t realize just how many I had until I went to organize my freezer while looking for something lol. I decided that it was time to start using some instead of “saving for a special occasion”. I came across this recipe on Pinterest and it seemed easy and fast so I decided to give it a shot. I am SOO SOO glad I did! Not only does the house smell fantastic it tastes really good too. I used frozen berries so it took about 50 minutes to bake fully. The only change I made was to add 1/2 teaspoon of vanilla to the milk – force of habit I suppose since I always add a bit of flavoring to anything I bake lol. Can’t wait to try this in the summer when my raspberry bushes are full of fruit! Thanks for a great recipe 🙂

      1. Hi! I made your cobbler today, but I substituted almond flour, monk fruit sweetener, almond milk, and butter flavored coconut oil. I used fresh blueberries, straight from our bushes. It turned out completely purple and a little soupy…but it tastes fantastic!! Maybe next time I’ll add a little more flour…?

I got this recipe from my mom 50 years ago!❤ I have made it with every fruit imaginable and one thing she told me is that you must drain the fruit and depending on what fruit you use, the oven time can range from 30-60 min. Just keep an eye on it and make sure it doesn’t burn, and it will turn out great!!

  20. Thank you! It was delicious! I used fresh blueberries and the bush is still full so I will to tweak. I will cut the butter from 1/2 cup to 1/2 stick (or 1/4 cup), the sugar to 3/4 cup, and use 1-1/2 cups of flour instead of 1 cup. I used brand new baking powder, but the crust would not brown, so I will increase from 2 two 3 teaspoons. Also I will bake it in an 8 x 8 pan that is 2.5 deep. Will probably have to adjust the time as well. Will let you know what happens.

  22. Made this tonight with a mixture of fresh and frozen blueberries and it was super yummy! After 47 minutes, it got golden brown on top, so I turned off the oven and left it to cool in there… it got nice and crispy on top ???? perfect with a scoop of vanilla ice cream! I just add 1 cup of self-rising flour to the sugar mix slightly add the milk whisking as I pour then add 2 cups of defrosted blueberries with a teaspoon of sugar that has been left standing for about 30 minutes. It has been my go-to desert for spur of the moment times as it is so easy! Double the recipe and you have enough left over for the family after Dad takes his “share.” ???? Pie filling or canned fruit works when you don’t have fresh. I just pour it right into the batter in the pan.
