Hey there! So on Monday we started the Advocare 24 Day Challenge which basically consists of supplements and clean eating. (No dairy, sugar, processed food, fatty cuts of meat.) We are also in the process of painting our new place and preparing to move next week. Are we crazy or what? Well, meet the salvation to our sanity…dun-dun-du-DUN…the crock pot.
Humble. Unassuming. Boy-genius of the culinary world….or something like that! 😉 Here are 3 great clean eating crock pot recipes that are saving our lives right about now.
I made this last night and it was so crazy-good! And it made enough that we can eat loaded baked potatoes with it later this week! Two meals out of the crock pot=fan-freaking-tastic.
There’s a reason this chili is my go-to; it freezes easily and is a perfect dump and stir recipe for a busy day. Just wait till the last 1/2 hour or so to add the beans. This is perfect for the chilly nights of fall. Or winter. Or summer. It’s really good all the time.
3. Shredded Salsa Chicken
Place 2-4 frozen chicken breasts in a crock pot. Top with a 1/2-1 jar of salsa or a can of tomatoes and taco seasoning. (I use this taco seasoning recipe.) This stuff is fantastic and so easy! Also ,one of my favorite “kitchen hacks” is shredding meat by stirring it in in a kitchen-aid on low with the regular paddle attachment. Because shredding meat with two forks is the worst!
