Peaches are such a great summer fruit and are so easy to add flavor and variety to many of your basic recipes! I love to add them to my oatmeal or in a bowl with vanilla yogurt for an easy breakfast or snack. Summers growing up we always had peaches around! My mom would buy bushels of them and then can them so we could enjoy them for the rest of the winter. (See my How to Can Peaches post for the full breakdown on canning peaches!) But my favorite way to enjoy peaches has always been in this Lazy Day Peach Cobbler.
Lazy Day Peach Cobbler was a standby in my house growing up…perfect for summer nights on the porch topped with a scoop of homemade ice cream, but equally as wonderful served warm in front of a cozy fire with a cup of steaming coffee. Regardless, it is delicious. Plus, you can use fresh peaches when their in season, but canned or frozen are great as well. The other day we were having friends over last minute so I decided to whip up this peach cobbler. Like my blueberry cobbler, it is delightfully simple. The perfect “company’s coming and I need a quick dessert” dessert. Add a scoop of ice cream on top and you are golden.
- ½ cup unsalted butter
- 1 cup flour
- 1 cup sugar
- 2 teaspoon baking powder
- ½ teaspoon salt
- ⅔ cup milk
- 1½ cups sliced peaches (defrost and drained if using frozen or drained canned)
- Place butter in 8x8 pan and melt in the microwave.
- Mix flour, sugar, salt and baking powder together. A
- dd in milk and stir until batter is moistened.
- Drop batter by spoonfulls on top of the butter and gently spread.
- Top with sliced peaches.
- Bake at 350 for 30-35 minutes until golden brown. Serve warm.
It’s totally okay if the center is a bit gooey, actually that’s the best part! I love to enjoy this easy peach cobbler with a cup of coffee (decaf if after 3pm!) or a glass of cold milk. It’s the perfect sweet way to use summer produce and makes an easy dessert to whip up for your friends and family.
