Oatmeal cookies are so perfectly delightful. I feel like they kind of get a bad rap by association with rasin cookies. Oatmeal raisin cookies are good, but since most people pick up a raisin cookie assuming those dark dots are chocolate chips, they bite in expecting an amazing, mind blowing cookie and they get…raisins….and oatmeal. *womp-womp-womp*
I promise these coconut lime oatmeal cookies will make your taste buds do a happy dance and forget about all the cookie hurt in your shattered past. These cookies taste….happy. They are like the promise of summer, which is perfect for our volatile March weather here in Michigan. This cookie will remind you that summer is coming and summer is good.
The coconut flavor of these cookies is mild, so even if you’re not a huge coconut fan I bet you’ll like these! Now, the lime…the lime is coming at ya! It’s a tangy contrast to the butter flavor without being overwhelming and, well, just trust me, make these cookies and you’ll see how good they are!
- ½ cup butter, slightly softened (NOT melted)
- ½ cup shortening
- 2 eggs, beaten
- 1 teaspoon vanilla
- 1 cup sugar
- ¼ cup lime juice
- 1¼ cup flour
- 1 teaspoon soda
- 1 teaspoon salt
- 3 cups quick cooking oats
- ¾ cup coconut
- ½ teaspoon lime zest
- Cream butter, shortening, sugar, eggs, vanilla and lime juice with a hand or stand mixer. Add flour, soda, salt, oats, coconut, and lime zest and stir by hand to combine. (Optionally you can refrigerate the dough for one hour before baking.) Drop by Tablespoon or roll into balls and placed on lightly greased cookie sheet. Bake at 350 for 10-12 minutes.
After I made these cookies (and taste-tested to make sure they were good!) I bundled them up and stopped by to visit a neighbor I hadn’t seen in awhile. I had passed by her house the day before, but didn’t want to drop by unannounced with nothing in hand; if you drop in on your neighbor without warning then, in my book, you better have a plate of cookies or some other special goodness in hand. What a great decision that was! She had a baby since I last saw her and so I got to “ooh” and “aahh” and get baby fever and Layla got her first kiss from my friend’s son.
I got to enjoy the process of baking and creating something delicious and then pass that joy on to someone else. Exactly why I love baking in the first place.
Some people in their quest for healthy living might try to eschew baking special treats like this altogether, but I can’t give them up. I love the whole process–it’s sort of therapeutic to me and makes me feel connected to my past in a warm and fuzzy way. But I know it’s not good for my waistline to have three dozen cookies sitting around my house so passing them on to a neighbor, our hardworking intern team, or Nate’s music friends at church is a great way I can still bake, have a little of the good stuff, and then pass on the love! Win-Win-Win!
