Coconut Lime Oatmeal Cookies

Oatmeal cookies are so perfectly delightful. I feel like they kind of get a bad rap by association with rasin cookies. Oatmeal raisin cookies are good, but since most people pick up a raisin cookie assuming those dark dots are chocolate chips, they bite in expecting an amazing, mind blowing cookie and they get…raisins….and oatmeal. *womp-womp-womp*

I promise these coconut lime oatmeal cookies will make your taste buds do a happy dance and  forget about all the cookie hurt in your shattered past. These cookies taste….happy. They are like the promise of summer, which is perfect for our volatile March weather here in Michigan. This cookie will remind you that summer is coming and summer is good.

The coconut flavor of these cookies is mild, so even if you’re not a huge coconut fan I bet you’ll like these! Now, the lime…the lime is coming at ya! It’s a tangy contrast to the butter flavor without being overwhelming and, well, just trust me, make these cookies and you’ll see how good they are!

After I made these cookies (and taste-tested to make sure they were good!) I bundled them up and stopped by to visit a neighbor I hadn’t seen in awhile. I had passed by her house the day before, but didn’t want to drop by unannounced with nothing in hand; if you drop in on your neighbor without warning then, in my book, you better have a plate of cookies or some other special goodness in hand. What a great decision that was! She had a baby since I last saw her and so I got to “ooh” and “aahh” and get baby fever and Layla got her first kiss from my friend’s son.

I got to enjoy the process of baking and creating something delicious and then pass that joy on to someone else. Exactly why I love baking in the first place.

Some people in their quest for healthy living might try to eschew baking special treats like this altogether, but I can’t give them up. I love the whole process–it’s sort of therapeutic to me and makes me feel connected to my past in a warm and fuzzy way. But I know it’s not good for my waistline to have three dozen cookies sitting around my house so passing them on to a neighbor, our hardworking intern team, or Nate’s music friends at church is a great way I can still bake, have a little of the good stuff, and then pass on the love! Win-Win-Win!

  1. These sound amazing and I actually do have lime juice in the fridge right now. Going to pin this so that I can try it later. Thanks for posting.

    1. I actually was wanting something lemon flavored, but then I had lime juice not lemon so these evolved. 🙂

    1. You could also leave it out and add in the same amount of oats. I know coconut isn’t for everyone, but it truly is mild (both in texture and flavor) in this recipe. 🙂

  2. These coconut lime oatmeal cookies sound very interesting and refreshing! I like coconut, lime, and oatmeal so I’m sure I’d love them. I love all types of cookies so it’s hard to pick a favorite. Chocolate chip, of course, then oatmeal!

  3. These look delicious! I love how “spring like” they look & sound. Definitely putting them on the “must try” list.

I love baking too & find it very therapeutic. It makes me happy to not give up all treats, but to tweak the ones I really enjoy to make them healthier. Have a great day!

    1. Thanks Elizabeth! I agree–I love that I don’t need to give up something completely too; I could never not bake!

  4. I love a good coconut cookie. My local super market sells the most amazing coconut and walnut cookies…LOVE! I’ll have to try your recipe, they look divine

    1. It’s an unusual combination, but really works! I’m pretty non-discriminatory in my cookie choices as well.

    1. Coconut is something I feel like people are very adamant about one way or the other, so yes, definitely don’t pass this up just because it has coconut in it!

    1. Hahaha! Our poor dudes do get the worst of it. The week before my period I’m always like “what’s wrong with our marriage–we should see a therapist, we need more date nights, why aren’t you loving me right, blah-blah-blah” and he’s like “okay well I actually think we are good, but I hear you”, and it’s all PMS–the next week I’m like “I love you, things couldn’t be better, we are such an awesome couple”. Haha! Poor guy! I get soo anxious and sensitive which is why the meditation/Bible study/me time is so huge for me.

  5. Hi Kate,
Your Coconut Lime Oatmeal Cookies look fantastic and they need to be in my cookie jar! Thanks so much for sharing with Full Plate Thursday and have a very special weekend!

  6. I consider myself a relatively seasoned baker and was so disappointed that these didn’t turn out. Of my 5 pans (each with a dozen) only 7 cookies turned out. The rest spread into paper-thin messes. I don’t live at a high altitude where the temp would need to be adjusted. Any other ideas?

    1. I’m so sorry they didn’t work for you! Was your butter melted when you made them? It should be just slightly softened. I’ll make a note of that in the recipe. You could also refridgerate the dough, but mine set up fine without doing that.

  7. These look amazing! I can’t wait to try to make a gluten free version. I’m thinking half oat flour and half gluten free all purpose flour. I love the combination of coconut lime! And thank you for stopping by Bringing Back Simplicity. 🙂
