Now that I am out of the first trimester I am finally starting to regain my appetite for salad. Yay! I really love a good salad and they are such a healthy food with endless variety, including this Harvest Apple Salad!
In general I follow this formula for a great salad.
1-2 cups of lettuce (iceberg, romaine, spinach, kale, spring mix–whatever suits your fancy!)
4 ounces of protein (taco meat, turkey pepperoni, deli meat, chicken)
1/4-1/2 cup other vegetables or fruit (blueberries, strawberries, green pepper, mushrooms, tomatoes, cucumbers)
1-2 Tablespoon extra goodies (shredded cheese, dried cranberries, sunflower seeds, pumpkin seeds, walnuts)
Salad dressing of choice (I must admit my favorite is Caesar!)
The other day I decided to create a “fall” salad incorporating some of my favorite things from fall: apples and pumpkin! This salad uses deli turkey, fresh apples, bruschetta jack cheese that I got in Amish country, and roasted pumpkin seeds! It is a salad that I could eat over and over again! Although I haven’t tried it yet, I think this would also make a great mason jar salad, just add the apples on the same day so they don’t go brown.
- 1½ cup spinach and romaine
- ¼ cup chopped apple
- 2 Tablespoons (a couple passes of the grater) of bruschetta jack cheese (available at specialty cheese stores; colby jack would be great as well)
- 1 Tablespoon pumpkin seeds
- Lightly toss all ingredients together. Top with your favorite salad dressing.
Simple, right? But oh so good!
The Bruschetta Jack cheese was a specialty cheese we got down in Shipshewana, Sargeneto carries a brand of it, but Colby-Jack would be great too! We were down in Shipshewana all day Tuesday making apple cider and doing all our great fall things. We go to a small mill where we’ve been going to press cider since I was a little girl. It’s a fun family tradition and a beautiful spot! My parents got tons of apples off their trees so there was lots of fresh cider to go around!
After that we went to Guggisburg cheese factory and Layla might have sampled every type of cheese! #spoiled The Bruschetta Jack was the special of the day and we also got bacon cheese because we are Americans. You truly haven’t lived until you’ve had a bacon grilled cheese sandwich.
Then we stopped at Yoders Meat Market and stocked up on meat! They have great prices and their meat is not treated with antibiotics or growth hormones. Just happy Indiana cows. I like to stock up every couple of months when we go down. After that we ate lunch at The Blue Gate and it was awesome, as always. I have been craving chicken and noodles and my meal definitely hit the spot. Then we were on to E & S Sales, a bulk food store that also sells puppies and playgrounds (random I know). It was a great stop towards the end of our trip because there were lots of things to keep Layla entertained!
It was a long day for this preggers mama, so some naps and a low-key evening were in order after we got home. And this Harvest Apple Salad was a good way to detox from my carb-fest! 🙂
