Raspberry Walnut Overnight French Toast Bake

You’re going to fall in love with this easy Raspberry Walnut Overnight French Toast Bake! This simple french toast casserole is perfect for a holiday breakfast — so tasty and easy!

This year I am planning to do up Christmas brunch in a big way. Normally we do bacon, cinnamon rolls and fruit, but this year I am adding this raspberry overnight french toast casserole and an egg casserole to the mix for a more sizable brunch spread!

(That will hopefully keep us full until dinner at my mom’s.)

You can prep the entire french toast casserole the night before and then just pop it in the oven Christmas morning.

LOVE IT.

There are more things to worry about on Christmas morning than food…like who is making the coffee.

Why do I love this Overnight French Toast Bake?

The raspberries add a great punch of flavor to this basic overnight French toast bake. Their tangy tartness is a great balance to the sweet crumb topping.

The walnuts add the perfect amount of crunch and are a great healthy fat source–cause we all know that healthy is what we are thinking about for a holiday brunch, right?! 😉

You can also use whatever thick bread you have on hand. I looked for whole wheat french bread, but I don’t think that is a thing, at least I didn’t find it at Meijer. Whole wheat bread doesn’t seem very French, but what do I know? You do whatever you want, but make sure the bread is thick, bakery style, not sliced, plain-jane bread.

Raspberry Walnut Overnight French Toast Bake

Ingredients

  • 1 loaf French bread
  • 6 eggs
  • 2 1/2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 2 1/2 cups raspberries
  • Topping:
  • 1/2 cup chopped walnuts
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1 teaspoon cinnamon
  • 3 Tablespoons chilled butter

Instructions

  1. Cut up french bread into 2 inch cubes. Place in lightly greased 9x13 pan.
  2. Whisk eggs, milk, sguar vanilla and cinnamon together in a separate bowl.
  3. Spoon raspberries over french bread, distributing evenly. Pour milk/egg mixture over the bread and raspberries. Cover overnight in the fridge.
  4. For topping, mix walnuts, brown sugar, flour, and cinnamon together. Cut in butter with a pastry blender or fingers until fine crumbs are formed. When ready to bake pour topping over casserole. Bake at 350 degrees covered for 20 minutes and uncovered for 25-30 minutes. The top should be golden and the bread fully cooked.

To make this recipe you may need…

  • 9×13 Baking dish – You may have noticed I pretty much constantly use my Longaberger pottery baking dish, but Pyrex is a great budget option that I have as my backup baking dish.
  • OXO Cut and Serve Turner – I accidentally brought one of these home from MOPS last time and I loved it so much I was tempted to keep it! (I didn’t though.) The perfect size for dishing up any baked good.
  • A pretty table runner – Okay, maybe not a necessity, but your fancy brunch or regular old brinner will look beautiful flanked by a watercolor floral table runner or a sweet burlap and lace version.

This french toast bake is perfectly paired with a steaming mug of coffee or a big glass of milk or holiday eggnog! Thick-sliced bacon is also ALWAYS on the shortlist of our brunch favorites.
