Christmas can be such a busy time! For me, I’ve noticed a tension between creating a “perfect” Christmas  (delicious food, fun activities, beautiful decor, dream gifts) and being present, relaxed, and joyful during this season. I want it all! But I think the only way to have it all is to have a nanny, chef, masseuse, and housekeeper. 😉 What I’m trying to say is…

…I need easy this time of year.

I’m too quick to fall into the super mom mentality and then end up stressed and grumpy. Then my daughter picks up on my attitude becomes sassy and grumpy and *boom* all my Pinterest-perfect plans go down the drain and all I want are cookies and a nap.

Southwest Egg Casserole-overnight hashbrown and egg bake perfect for Christmas morning!

I’ve shared the Overnight French Toast Casserole that I have for our Christmas menu and today I wanted to share another part of our Christmas brunch plan, Southwest Egg Casserole. Both can be made ahead of time or quickly on Christmas morning and can bake while the presents are being opened. In addition to that we’ll be adding an easy fruit salad (can of pineapple and two cans of mandarin oranges) and cinnamon rolls from a tube/pop-out can. *gasp*

This overnight egg casserole recipe has great color and flavor thanks to a full serving of onion and green pepper. You could also feel free to spice this up with your favorite veggies and really customize it for your family! Bacon, cheddar cheese and broccoli could be a yummy combination or sausage, leeks, and garlic. Mmm!

Southwest Egg Casserole

Cook Time: 1 hour
Total Time: 1 hour 15 minutes

An easy breakfast casserole with Southwest flair. It can be made ahead of time for a delicious breakfast or brunch dish.

Ingredients

  • 4 cups shredded hash browns, frozen
  • 1/2 pound sausage
  • 1 cup taco style cheese, cheddar or monterey jack is great too!
  • 1/2 chopped green pepper
  • 1/2 chopped medium onion
  • 7 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • black pepper 1/4 teaspoon or to taste
  • dash of garlic, I can't help but put garlic in everything

Instructions

  1. Mix hash browns, sausage, onion, and green pepper until well combined. Pour into greased 9x13 pan.
  2. Whisk eggs, milk, salt, pepper, and garlic together. Pour over hash brown mixture.
  3. Bake at 350 for 50-60 minutes until browned slightly and cooked firmly in the center.

I love this Southwest Egg Casserole because it is so quick and simple. It can be prepped ahead of time which gives me time to slow down and enjoy some “me time” while it bakes. Taking time to read something inspirational, journal, pray and meditate puts me in a peaceful and joyful state so I can relish the holidays making memories with my families.

I’ve recently been enjoying a lot of tea in the mornings, and the truth is I’m a sucker for all hot beverages! This Constant Comment tea from Bigelow is delicious and has a warm and comforting flavor. I love it with just a dash of french vanilla creamer! I picked up this tea at Wal-Mart in the aisle with the coffee, hot chocolate, and tea.  I was thrilled to make it out of the store with JUST the stuff on my list…I was thoroughly tempted by a box of Christmas cookies and an adorable penguin Christmas sweater. Everyone needs a cheesy Christmas sweater, right?
