We are a bit banana-obsessed in this household; we need almost two bunches a week to hold us over. The reason? My daughter is crazy for them! I admit I also love them because they are such an easy, healthy, and filling snack on their own, plus bananas are so tasty to add to my favorite foods and baked goods.
Now thanks to Sir Bananas™ there is another yummy way to enjoy bananas, banana milk. What?! Sir Bananas™ banana milk is a creamy blend of 2% milk and bananas that has no artificial colors or flavors and it is loaded with protein, calcium, and potassium. I’d call that a mom win! In addition to drinking it plain, I’m loving adding it for a shot of banana flavor to some of my favorite recipes like this Peanut Butter Banana Smoothie.
I decided to get creative and create a new Bananas Foster French Toast Bake featuring Sir Bananas™ milk! This easy french toast casserole can be made ahead the day before, refrigerated overnight, and then just popped in the oven the next morning for a delicious, fun, and healthy breakfast!
To keep it healthier I reduced the sugar, added the Sir Bananas™ milk, and used whole wheat hamburger buns in place of traditional French bread. The flavor is oh-so-good and I will definitely be making this again soon! I love that this Bananas Foster French Toast Bake is simple, but elevated enough for a special occasion brunch. This would be perfect to share for Easter brunch or for a spring baby or bridal shower brunch.
- 4-5 whole wheat hamburger buns, torn or sliced into 1 inch cubes (approximately 5 cups)
- 1½ cups Sir Bananas™ 2% banana milk
- 3 eggs
- ¼ cup brown sugar
- ½ teaspoon rum extract
- ¼ teaspoon cinnamon
- 2 bananas
- 1 tablespoon caramel
- Place torn whole wheat buns in 8x8 pan. In separate dish whisk banana milk, eggs, brown sugar, rum extract, and cinnamon. Pour over bread. Cover in plastic wrap and place in the refrigerator for an hour up to overnight.
- Preheat oven to 400. Slice bananas in a thin layer over the top of the french toast bake.
- Bake at 400 covered for 15 minutes. Remove cover and continue baking another 35 minutes.
- Remove from oven. Drizzle with caramel syrup. Serve warm. Refrigerate leftovers.
If you aren’t into the rum flavor you can leave it out, but it really is quite mild. If you want to intensify it, add up to a full teaspoon. Since I rarely make the same recipe the same way twice I think the next time I make this it I may throw in some toasted walnuts too! They aren’t my husbands favorite, which is why I decided against them this time, but I think a half cup of them would add a nice crunch to this easy breakfast recipe.
Layla loved this heavenly Bananas Foster French Toast Bake and was eager for “more-more” of her special banana milk too. I think we’ve found a new favorite! Sir Bananas™ banana milk comes in two flavors– 2% milk with Bananas and 2% milk with Bananas & Chocolate (<<holy yum!). I picked mine up at Wal-Mart in the dairy section.
