Berry Chicken Cashew Salad

It’s another beautiful summer day here in Michigan! I am so thankful that the intense heat has subsided leaving us with perfect summer day after perfect summer day. Since we are busy enjoying the outdoors I don’t like to spend much time in the kitchen during the summer. I’ve already shared a couple of yummy crockpot recipes and today I want to share a simple berry chicken salad that it SO wonderful and perfect for summer!

Berry Chicken Cashew Salad

This berry chicken salad starts with a bed of spinach and romaine, then get’s topped with my Sweet Onion Chicken, then fresh strawberries and blackberries, some feta for pizazz and some cashews for crunch. My oh my! I like to top mine with the Ken’s Lite Sweet Vidalia Onion dressing I used in the chicken. But almost any dressing would be good on this! Brianna’s Blush Wine Vinaigrette is another of my other favorites for this salad!

Berry Chicken Cashew Salad

Yield: 1 serving
Prep Time: 10 minutes
Total Time: 10 minutes

Berry Chicken Salad topped with cashews and feta will have your mouth watering! This fresh and easy salad has the perfect blend of summertime ingredients!

Ingredients

  • 1 cup romaine lettuce, shredded
  • 1 cup spinach
  • 1/4-1/3 cup shredded sweet onion chicken or 2-3 ounces grilled chicken
  • 6 strawberries
  • 8 blackberries
  • 2 Tablespoons cashews
  • 1 Tablespoon feta cheese
  • 1 Tablespoon dressing of choice, Lite sweet onion recommended

Instructions

  1. Layer lettuces, chicken, sliced strawberries, blackberries, cashews and feta in large bowl. Lightly toss and top with dressing.

Berry Chicken Salad

Seriously– biting into this salad is heavenly! Each bite has something different in it, but they all pair together so well. This is a great salad to prep ahead in a mason jar too! I am getting more and more into meal prep because it makes my life so much easier. I hate that while I’m rushing around to get my toddler, Layla settled and eating I am often barely sitting down as she is finishing and ready to go again! (Unless she doesn’t like what we are eating then she putzes around forever and plays with her food.) Prepping sliced veggies ahead of time, doing up some chicken in the crockpot, and tearing up some salad is a HUGE help to me as I eat healthy at lunch and dinner.

Speaking of eating healthy yesterday I started my second official round of the 21 Day Fix! I am actually mixing Piyo and the 21 Day Fix workouts together–I’m excited to see how theses programs work together to get me stronger! This time around I am trying to plan out all my meals and snacks for an entire week in a spreadsheet so I don’t have to think through balancing my containers each day. I have done all the planning and a little bit of prep ahead of time which makes my life a heck of a lot easier. And I’m all about keeping it easy!
