April has proven to be quite the little flirt, giving us warm days and also a snow prediction all in its 5 total days. Every day it’s warm enough to go without “big coats” I give a cheer–there is something truly glorious about not having to locate socks (where are all the socks going??), shoes/boots, coats, mittens (poor Layla’s set is down to just one mitten so she has to wear one cute mitten and one too small one from last year), and hats just to go outside for a walk.
My intense longing for warmer days has led all my recipes of late to be focused on spring and summer. I want to grill burgers and top them with avocado and bacon, pick strawberries and load them into a breakfast casserole–I want all the spring things to eat because maybe then the weather will start to cooperate.
My spring fever led me to the produce department of my local Meijer where I proceeded to buy every berry in sight! Fresh fruit is just perfect for backyard barbecues, potlucks, and picnics, and so I wanted it all. I came home and combined all my treasures into this amazing fruit salad with honey and lime. It truly is amazing! And so simple to make. If you’ve been doing the old, vanilla pudding mix trick to make fruit salad you are going to want to step away from the small box and try this instead!
The flavor of the lime is just the kick this sweet fruit salad needs and the honey is divine. I could sit and eat it with a big spoon for days. Along with eating it plain, I’ve also used it to top pancakes and make Greek yogurt parfaits!
- 1 quart hulled and sliced strawberries
- 1 pint blueberries
- 1 pint blackberries
- 2 cups sliced grapes
- 2 nectarines peeled, cored, and chunked
- ¼ cup honey
- zest of one lime (2 teaspoons)
- juice of one lime (2-3 Tablespoons)
- Wash and cut all fruit and berries. The total amount of all prepared fruit should be close to 8 cups.
- Gently stir all fruit together until well distributed.
- Add honey, lime zest, and lime juice to the fruit. Stir until fruit is coated.
- Store in the refrigerator.
- Great right away and great once the flavors have soaked in for awhile!
When I was roaming around Meijer thinking about summer and looking at fruit I thought it would be fun to make a red, white, and blue fruit salad. (The grapes are white according to the label. Work with me people.) So this honey lime fruit salad would be perfect for Memorial Day! But please don’t wait that long to make it! It’d make a great Easter side or a fun way to make your french toast or pancakes extra fancy on the weekend.
Or just make and eat this delicious fruit salad because it’s Wednesday and you need something to celebrate and remind you that spring IS coming!
